Ingredients

  • 1 cup cooked white rice
  • 2 cups whole milk or any milk of choice
  • ¼ cup granulated sugar
  • 1 egg lightly beaten
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • teaspoon salt
  • Optional: ¼ cup raisins ground nutmeg for garnish

Instructions

Heat the Milk and Rice:

  • In a medium saucepan over medium heat, combine cooked rice, milk, sugar, and salt. Cook and stir until thick and creamy, about 15–20 minutes.

Add Egg and Flavour:

  • Slowly stir in the beaten egg while continuously whisking to avoid scrambling. Cook for another 5–10 minutes, stirring constantly, until the pudding thickens.

Finish with Flavour:

  • Remove from heat. Stir in vanilla and cinnamon. Add raisins if desired.

Serve:

  • Serve warm or let cool and refrigerate to serve chilled. Sprinkle with nutmeg or extra cinnamon before serving.

Notes

Dairy-Free Option: Use almond, coconut, or oat milk.
Make It Richer: Substitute some milk with cream for extra creaminess.
Leftover Rice Hack: A perfect way to use leftover rice!
Add-Ins: Try chopped nuts, orange zest, or a splash of rum for a twist.
Storage: Store in the fridge for up to 4 days. Reheat gently with a splash of milk.
