Ingredients
  

For the Casserole:

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 small onion chopped
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Instructions
 

Prepare Ingredients:

  • Preheat oven to 350°F (175°C).

Cook Beef:

  • In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent. Add ground beef, garlic powder, salt, and pepper. Cook until browned.

Combine Casserole:

  • In a greased baking dish, combine cooked beef, uncooked rice, beef broth, and frozen vegetables. Mix well.

Bake:

  • Cover with foil and bake for 30–35 minutes until rice is tender. Remove foil, sprinkle shredded cheddar cheese on top, and bake 5 more minutes until cheese melts.

Serve:

  • Let casserole rest 5 minutes before serving. Serve warm.
