Ingredients
  

  • 1 lb ground beef
  • 4 medium potatoes peeled and thinly sliced
  • 1 onion chopped
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking the beef

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add ground beef and chopped onion. Cook, stirring frequently, until the beef is browned and the onions are soft. Drain any excess fat.
  • Stir in garlic powder, paprika, salt, and pepper to the beef mixture.
  • In a separate bowl, mix the cream of mushroom soup with milk to create a smooth sauce.
  • In a greased 9x13-inch baking dish, layer the sliced potatoes, followed by half of the beef mixture. Repeat with another layer of potatoes and the remaining beef mixture.
  • Pour the soup mixture evenly over the layers. Cover with aluminum foil.
  • Bake in the preheated oven for 35 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  • Let the casserole sit for 5 minutes before serving.

Notes

  • You can use any type of cheese you prefer, such as mozzarella or colby jack, for a different flavor.
  • Add some vegetables like peas, carrots, or corn for extra nutrition and flavor.
  • To make it more indulgent, top with crispy bacon bits before serving.
  • This casserole can be made ahead of time and stored in the fridge for up to 2 days before baking.
  • For a lighter version, use ground turkey or chicken instead of ground beef.
