Easy Greek Pasta Salad Recipe (Authentic Mediterranean Flavors, Make-Ahead)

This Greek pasta salad is inspired by the unforgettable dish I tasted at a Greek-American wedding that completely changed how I think about pasta salads. The secret lies in the proper proportions of a bright lemon-oregano vinaigrette and giving everything time to meld together beautifully. It is the perfect make-ahead dish for potlucks, picnics, and summer gatherings.

Ingredients
  

For the Pasta and Vegetables

  • 12 ounces penne or orzo pasta or any short pasta shape
  • 2 cups cherry tomatoes halved
  • 1 large English cucumber diced into bite-sized pieces
  • 1 cup crumbled feta cheese preferably Greek feta
  • cup red onion finely diced

For the Lemon-Oregano Vinaigrette

  • cup extra virgin olive oil quality matters here
  • 3 tablespoons fresh lemon juice about 1 large lemon
  • 2 teaspoons dried oregano or 1 tablespoon fresh
  • 3 cloves garlic minced
  • ½ teaspoon sea salt adjust to taste
  • ¼ teaspoon black pepper freshly cracked

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente (still with a slight bite). Drain well and transfer to a large mixing bowl while still warm.
  • While the pasta cooks, prepare the vinaigrette. In a small bowl or jar, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, sea salt, and black pepper. The mixture should be well combined and slightly emulsified.
  • Pour the warm vinaigrette over the hot pasta and toss very well to coat every strand. The warm pasta will absorb the flavors beautifully. Let this mixture sit at room temperature for at least 15-20 minutes so the pasta can properly absorb the dressing.
  • Once the pasta has cooled slightly and absorbed the vinaigrette, gently fold in the diced cucumber, halved cherry tomatoes, finely diced red onion, and crumbled feta cheese. Toss everything together gently to distribute evenly without breaking up the feta too much.
  • Taste the salad and adjust seasoning if needed with additional salt, pepper, lemon juice, or oregano. If preparing ahead, cover and refrigerate until ready to serve. The salad can be served cold or at room temperature.
  • Before serving, give the salad a gentle toss as some dressing may have settled at the bottom. If it seems dry after sitting, drizzle with a touch more olive oil and lemon juice to refresh it.

Notes

The key to authentic Greek pasta salad is allowing the lemon-oregano vinaigrette to fully penetrate the pasta and vegetables - do not skip the resting time. Storage: Keep refrigerated in an airtight container for up to 3 days. The salad actually improves after a day as flavors deepen. Variation: Add kalamata olives, red onion, bell peppers, or fresh dill for additional brightness and texture.
