Ingredients
  

  • 2 cups mixed frozen berries (strawberries, blueberries, raspberries, blackberries)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 cup diced mango (fresh or frozen)
  • 1 cup sliced bananas
  • ½ cup shredded coconut (optional)
  • ¼ cup honey or maple syrup
  • 1 cup vanilla Greek yogurt
  • ¼ cup orange juice
  • Fresh mint leaves (for garnish)

Instructions
 

  • In a large mixing bowl, combine the mixed frozen berries, pineapple chunks, diced mango, and sliced bananas.
  • If using, add the shredded coconut to the bowl.
  • Drizzle the honey or maple syrup over the fruit and gently toss to combine.
  • In a separate small bowl, mix the vanilla Greek yogurt and orange juice until smooth.
  • Pour the yogurt mixture over the fruit and gently fold to combine, ensuring all the fruit is coated.
  • Spoon the fruit salad into individual serving cups or a large container.
  • Cover and freeze for at least 2-4 hours, or until the fruit salad is firm and frozen.
  • Before serving, let the fruit salad sit at room temperature for a few minutes to soften slightly.
  • Garnish with fresh mint leaves and enjoy!
