Ingredients
  

  • 1 can 15 oz whole kernel corn, drained
  • 1 can 15 oz cream-style corn
  • 1 package 8.5 oz cornbread mix
  • 1 cup sour cream
  • ½ cup unsalted butter melted
  • 1 cup shredded cheddar cheese optional
  • Salt and pepper to taste

Instructions
 

Preheat the Oven:

  • Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish or a similar-sized casserole dish.

Mix the Ingredients:

  • In a large bowl, combine both types of corn, cornbread mix, sour cream, melted butter, salt, and pepper. Stir well until all ingredients are fully incorporated. If using cheese, stir in half of the shredded cheddar cheese.

Bake the Casserole:

  • Pour the corn mixture into the prepared baking dish. Spread it out evenly. If desired, sprinkle the remaining cheese on top. Bake for 45 minutes, or until the casserole is golden and set in the middle.

Serve:

  • Remove from the oven and allow to cool for a few minutes before serving.

Notes

  • Make Ahead: You can prepare the casserole ahead of time and refrigerate it until ready to bake. Just add a few extra minutes to the cooking time if baking from cold.
  • Customization: Add diced jalapeños for a spicy kick or stir in crumbled bacon for extra flavor.
