Instructions
Heat the Cream:
In a small saucepan, heat the cream and butter over medium heat until just simmering—do not boil.
Melt the Chocolate:
Place chopped chocolate in a heatproof bowl. Pour hot cream mixture over the chocolate. Let sit for 2–3 minutes, then stir until smooth.
Add the Rum:
Stir in the rum until fully incorporated. Cover and refrigerate for 2 hours or until firm enough to scoop.
Form the Truffles:
Scoop out 1 tablespoon of the chilled mixture and roll into balls. Coat in cocoa powder, chopped nuts, or sprinkles.
Chill Again:
Refrigerate until firm. Serve chilled or at room temperature.
