Ingredients
  

  • 2 tablespoons vegetable oil
  • 2 eggs lightly beaten
  • 1 lb cooked chicken breast diced or shredded
  • 3 cups cooked white rice preferably day-old
  • 1 cup frozen peas and carrots
  • 3 green onions sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

Scramble the Eggs:

  • Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add beaten eggs and scramble until cooked. Remove and set aside.

Cook the Veggies & Chicken:

  • Add the remaining oil to the skillet. Sauté peas, carrots, and green onions for 2–3 minutes. Add chicken and cook until heated through.

Add the Rice:

  • Stir in cooked rice, breaking up any clumps. Cook for 3–4 minutes, stirring occasionally.

Season and Finish:

  • Return the eggs to the skillet. Add soy sauce, oyster sauce (if using), sesame oil, salt, and pepper. Mix well until everything is heated and coated.

Serve:

  • Garnish with extra green onions and serve hot!

Notes

Make Ahead:
Cook the rice and chicken a day in advance for best texture and quicker prep time.

Swap in shrimp or tofu for the chicken, or add extra veggies like bell peppers or corn.
