For the Potatoes:
- 2 lbs potatoes peeled or unpeeled
- 1 teaspoon salt
- 4 cups water or enough to cover
- 1 tablespoon butter optional
- 1 tablespoon fresh parsley chopped, optional
Boil Potatoes:
Wash and peel potatoes if desired. Cut into evenly sized pieces.
Place potatoes in a pot and cover with water. Add salt.
Bring to a boil over medium-high heat, then reduce to a simmer.
Cook for 12–15 minutes until potatoes are fork-tender.
Drain water and return potatoes to the pot.
Add butter and parsley if using. Toss gently and serve warm.
