Ingredients
  

  • 2-3 medium cucumbers
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon granulated sugar
  • ½ teaspoon garlic minced (about 1 clove)
  • ½ teaspoon fresh ginger grated or minced (optional)
  • ¼ - ½ teaspoon red pepper flakes adjust to desired spice level
  • Optional: 1 tablespoon sesame seeds toasted, for garnish
  • Optional: 1 tablespoon fresh cilantro chopped (for garnish)
  • Optional: Pinch of salt

Instructions
 

Prepare Cucumbers:

  • Wash the cucumbers thoroughly.
  • For thin slices: Use a mandoline slicer, a vegetable peeler, or a very sharp knife to slice the cucumbers into thin rounds or half-moons (about ⅛-inch thick).
  • For smashed cucumbers (traditional style): Place cucumbers on a cutting board. Use the side of a large knife or a rolling pin to gently "smash" them until they crack open. Then, roughly chop them into bite-sized pieces. This creates more surface area for the dressing to cling to.
  • Optional Salting (for crisper cucumbers): If you have time and want to ensure extra crispness and prevent a watery salad, place the sliced/smashed cucumbers in a colander, toss with a pinch of salt, and let them sit for 10-15 minutes. Then, gently squeeze out any excess water before adding to the dressing. Rinse quickly if you're concerned about saltiness.

Make the Dressing:

  • In a medium bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger (if using), and red pepper flakes. Whisk until the sugar is dissolved.

Combine and Chill:

  • Add the prepared cucumbers to the bowl with the dressing.
  • Toss gently until the cucumbers are thoroughly coated.
  • For best flavor, cover the bowl and refrigerate for at least 15-30 minutes to allow the flavors to meld and the cucumbers to chill (optional, but highly recommended).

Serve:

  • Just before serving, give the salad another quick toss.
  • Transfer to a serving bowl. Garnish with toasted sesame seeds and fresh chopped cilantro, if desired. Serve chilled.

Notes

  • Cucumber Type: English or Persian cucumbers are often preferred as they have thinner skins and fewer seeds, eliminating the need for peeling/seeding. Regular slicing cucumbers work too, but may benefit from peeling and seeding if their skin is thick or seeds are large.
  • Sweetness & Spice: Adjust the amount of sugar and red pepper flakes to suit your taste preferences. For less sugar, you can use a touch of stevia or omit it entirely if you prefer a purely savory/tangy salad.
  • Ginger: Fresh grated ginger adds a wonderful zing. If you don't have fresh, you can use a tiny pinch (about ⅛ teaspoon) of ground ginger, but fresh is superior here.
  • Storage: This salad is best enjoyed fresh or within a day. It can be stored in an airtight container in the refrigerator for up to 2-3 days, but the cucumbers will soften over time and release more water.
