This easiest caramel corn is sweet, crunchy, and totally addictive! Made with just a few pantry staples, it’s perfect for movie nights, parties, or homemade gifts—no candy thermometer needed.
Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Make Caramel Sauce:
In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Bring to a gentle boil, stirring constantly. Simmer for 4–5 minutes without stirring.
Add Vanilla and Baking Soda:
Remove from heat and stir in baking soda and vanilla. The mixture will bubble up—this is normal.
Coat the Popcorn:
Place popcorn in a large bowl. Pour the caramel sauce over it and stir quickly to coat evenly.
Bake:
