Ingredients
  

  • 12 cups popped popcorn about ½ cup kernels
  • 1 cup packed brown sugar
  • ¼ cup light corn syrup
  • ½ cup unsalted butter
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions
 

Preheat Oven:

  • Preheat oven to 250°F (120°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Make Caramel Sauce:

  • In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Bring to a gentle boil, stirring constantly. Simmer for 4–5 minutes without stirring.

Add Vanilla and Baking Soda:

  • Remove from heat and stir in baking soda and vanilla. The mixture will bubble up—this is normal.

Coat the Popcorn:

  • Place popcorn in a large bowl. Pour the caramel sauce over it and stir quickly to coat evenly.

Bake:

  • Spread coated popcorn onto the prepared baking sheet. Bake for 45 minutes, stirring every 15 minutes.

Cool and Serve:

  • Let cool completely before breaking into pieces. Store in an airtight container.
