Ingredients
  

Main Ingredients:

  • 1 lb ground beef or ground turkey
  • 2 cups small pasta (elbow or penne) uncooked
  • 2 tablespoon taco seasoning
  • 1 cup salsa
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 2 cups beef broth

Cheese & Toppings:

  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • green onions for garnish
  • sour cream for serving

Instructions
 

Prep:

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13 baking dish.

Combine:

  • In the baking dish, add uncooked pasta, ground beef, taco seasoning, salsa, black beans, corn, and beef broth. Stir to combine.

Bake:

  • Cover tightly with foil and bake for 25–30 minutes until pasta is tender and liquid is mostly absorbed.

Add Cheese:

  • Remove foil, stir gently, then top with shredded cheddar and mozzarella cheese.

Melt & Finish:

  • Return to oven uncovered for 5–7 minutes until cheese is melted and bubbly.

Serve:

  • Garnish with green onions and serve with sour cream if desired.

Notes

  • Use spicy salsa for extra heat.
  • Swap beef with chicken or plant-based meat for variation.
  • Leftovers store well in the fridge for up to 4 days.
