This Dreams Crème Brûlée is a silky, rich custard with a crisp caramelized sugar top. It’s a classic French dessert with a dreamy texture—perfect for holidays, date nights, or impressing your guests.

Ingredients
  

  • 2 cups heavy cream
  • 1 vanilla bean or 1 tablespoon pure vanilla extract
  • 5 large egg yolks
  • ½ cup granulated sugar plus extra for topping
  • Pinch of salt

Instructions
 

Preheat Oven:

  • Preheat to 325°F (160°C). Place ramekins in a deep baking dish.

Heat the Cream:

  • In a saucepan, heat heavy cream and vanilla until just steaming. Remove from heat. If using a vanilla bean, split and scrape seeds into the cream.

Mix Yolks and Sugar:

  • In a bowl, whisk egg yolks, ½ cup sugar, and salt until pale and creamy.

Temper and Combine:

  • Slowly whisk the hot cream into the yolk mixture a little at a time to avoid scrambling.

Bake in Water Bath:

  • Pour custard into ramekins. Fill baking dish with hot water halfway up the sides of the ramekins. Bake 40–45 minutes until centers are just set.

Chill:

  • Remove ramekins, cool to room temperature, then chill for at least 2 hours or overnight.

Caramelize the Sugar:

  • Before serving, sprinkle 1–2 teaspoons sugar over each custard. Use a kitchen torch or broiler to caramelize until golden and crisp.

Notes

  • Flavour Twist: Add a splash of liqueur like Grand Marnier or espresso powder for variation.
  • No Torch? Use your oven broiler on high—watch closely to avoid burning.
  • Make Ahead: Perfect make-ahead dessert. Just brûlée the tops right before serving.
  • Serving Tip: Best served chilled with fresh berries or a mint sprig for garnish.
