Ingredients
  

For the Muffins:

  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips semi-sweet or milk chocolate

Instructions
 

Prepare Muffin Batter:

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin pan with liners.
  • In a large bowl, whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together buttermilk, oil, eggs, and vanilla extract.
  • Pour wet ingredients into dry ingredients and stir until just combined.
  • Fold in chocolate chips gently.

Bake Muffins:

  • Spoon batter into muffin cups, filling about ⅔ full.
  • Bake 18-20 minutes until a toothpick inserted comes out clean.
  • Cool in pan 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Tip: Do not overmix the batter to keep muffins tender.
  • Variation: Add nuts or white chocolate chips for extra flavor.
