Ingredients
  

  • 2 large cucumbers thinly sliced
  • ½ small red onion thinly sliced
  • cup crumbled feta cheese
  • 2 tablespoons chopped fresh dill or parsley
  • Salt and black pepper to taste

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or white wine vinegar
  • 1 clove garlic minced
  • ½ teaspoon dried oregano

Instructions
 

Make the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, garlic, and oregano. Season with salt and pepper.

Assemble the Salad:

  • In a large bowl, combine cucumbers, red onion, feta, and herbs.

Toss and Serve:

  • Pour dressing over the salad and toss gently. Serve immediately or chill for 15 minutes for extra flavour.
