Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg, white vinegar, vanilla extract, and red food coloring. Mix until well combined.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape the Cookies: Scoop about 2 tablespoons of dough for each cookie and place them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each cookie slightly with your hand or the bottom of a glass.
Bake the Cookies: Bake in the preheated oven for 12-14 minutes, or until the edges are set but the centers are still soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Prepare the Frosting: In a medium mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
Assemble the Cookies: Once the cookies are completely cooled, spread a generous dollop of cream cheese frosting on top of each cookie.
Optionally, sprinkle red velvet crumbs (from the cookies) on top of the frosting for decoration.
Color Tip: For a vibrant red color, use gel food coloring instead of liquid food coloring.
Storage: Store any leftover cookies in an airtight container at room temperature. They should keep well for up to 3 days.
