Ingredients
  

  • 1.5 lbs 680g boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • Optional: chopped fresh parsley for garnish

Instructions
 

  • Prep Chicken: Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
  • Sear Chicken (Optional): Heat olive oil in a skillet and sear chicken 2–3 minutes per side for extra flavor. Transfer to CrockPot.
  • Add Sauce Ingredients: In a bowl, whisk together garlic, heavy cream, chicken broth, Parmesan, and sun-dried tomatoes. Pour over chicken in CrockPot.
  • Cook: Cover and cook on low for 4 hours or high for 2–3 hours until chicken is tender.
  • Add Spinach: Stir in fresh spinach 10 minutes before serving until wilted.
  • Serve: Garnish with parsley and serve with pasta, rice, or crusty bread.

  • Make Ahead: Assemble ingredients in the CrockPot insert and refrigerate overnight; cook the next day.
