Ingredients
  

  • lbs beef sirloin sliced into strips
  • 2 bell peppers red and green, sliced
  • 1 medium onion sliced
  • 2 garlic cloves minced
  • ½ cup low-sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1 cup beef broth
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions
 

  • Place beef strips, peppers, onion, and garlic into Crockpot.
  • In a bowl, whisk soy sauce, brown sugar, beef broth, ginger, salt, and pepper. Pour over meat.
  • Cover and cook on Low for 5–6 hours or until beef is tender.
  • Mix cornstarch with 2 tablespoon water; stir into Crockpot 30 minutes before serving to thicken.
  • Serve hot over white rice.
