For the Soup: 1 ½ pounds boneless skinless chicken breasts or thighs 8 cups chicken broth 3 medium carrots sliced 3 celery stalks sliced 1 medium onion diced 3 garlic cloves minced 1 teaspoon dried thyme 1 teaspoon dried parsley ½ teaspoon dried rosemary ½ teaspoon black pepper ½ teaspoon salt adjust to taste 2 cups egg noodles or pasta of choice Optional Garnish: Fresh parsley chopped Grated Parmesan cheese
