Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup frozen peas

For Dumplings:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter melted
  • ½ cup milk

Instructions
 

Prepare the Crockpot:

  • Place chicken, carrots, celery, onion, garlic, thyme, salt, pepper, and chicken broth into the crockpot.

Cook the Chicken:

  • Cook on low for 3–4 hours, until chicken is tender. Shred chicken in the crockpot with two forks.

Prepare Dumplings:

  • In a bowl, mix flour, baking powder, salt, melted butter, and milk until a soft dough forms.

Add Dumplings:

  • Drop spoonfuls of dumpling dough into the crockpot. Cover and cook on high for 20–30 minutes, until dumplings are cooked through.

Finish and Serve:

  • Stir in frozen peas and cook 5 more minutes. Serve hot.
