This Crockpot Bourbon Chicken is sweet, savoury, and perfectly tender. Slow-cooked in a rich bourbon-inspired sauce, it’s an easy weeknight dinner served best over rice or noodles with a sprinkle of green onions.
2poundsbonelessskinless chicken thighs, cut into bite-sized pieces
½cuplow-sodium soy sauce
¼cupketchup
¼cupapple cider vinegar
½cupbrown sugar
2tablespoonsbourbonor apple juice for non-alcoholic version
1teaspoongarlic powder
½teaspoonground ginger
¼teaspooncrushed red pepper flakesoptional
2tablespoonscornstarch
2tablespoonswater
Cooked ricefor serving
Sliced green onionsfor garnish
Instructions
Add to Crockpot:
Place chicken pieces in the crockpot. In a bowl, whisk together soy sauce, ketchup, vinegar, brown sugar, bourbon, garlic powder, ginger, and red pepper flakes.
Cook:
Pour sauce over chicken. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
Thicken Sauce:
In a small bowl, mix cornstarch and water. Stir into crockpot during the last 30 minutes of cooking to thicken the sauce.
Serve:
Serve over cooked rice and garnish with green onions.
