Ingredients
  

Salmon:

  • 4 salmon fillets skin-on or skinless
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Creamy Tuscan Sauce:

  • 2 tablespoon butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese grated
  • cup sun-dried tomatoes
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning

Instructions
 

Sear Salmon:

  • Heat olive oil in a large skillet over medium-high heat. Season salmon with salt and pepper, then sear for 3–4 minutes per side until golden. Remove and set aside.

Make Sauce:

  • In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  • Add heavy cream, chicken broth, Italian seasoning, and Parmesan cheese. Stir until smooth and slightly thickened.

Add Vegetables:

  • Stir in sun-dried tomatoes and spinach. Cook until spinach is wilted.

Finish Dish:

  • Return salmon to the skillet and spoon sauce over the top. Simmer for 2–3 minutes.

Serve:

  • Serve warm over pasta, rice, or mashed potatoes.

Notes

  • Do not overcook salmon to keep it tender and juicy.
  • Add red pepper flakes for heat.
  • Sauce thickens more as it cools.
