Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon crushed red pepper flakes optional
  • 1 cup baby spinach
  • Fresh basil for garnish (optional)

Instructions
 

Season and Sear the Chicken:

  • Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

Make the Sauce:

  • In the same skillet, sauté garlic for 1 minute. Add sun-dried tomatoes, then stir in heavy cream, chicken broth, Parmesan cheese, and red pepper flakes. Simmer for 3–4 minutes until thickened.

Add Chicken and Spinach:

  • Return chicken to the skillet. Add spinach and simmer for 3–5 more minutes until spinach wilts and chicken is coated in sauce.

Serve:

  • Garnish with fresh basil and serve with pasta, rice, or crusty bread.
