Ingredients
  

For the Crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar

For the Cheesecake Filling:

  • 24 oz 3 packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoon all-purpose flour
  • ½ cup strawberry preserves

For the Strawberry Crunch Topping:

  • 20 golden Oreos crushed
  • 3 tablespoon unsalted butter melted
  • 1 packet 3 oz strawberry gelatin powder

Optional Garnish:

  • Fresh strawberries
  • Whipped cream

Instructions
 

Prepare the Crust:

  • Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside.

Make the Cheesecake Filling:

  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each addition. Blend in sour cream, vanilla, and flour until combined.

Add the Strawberry Layer:

  • Pour half the cheesecake batter over the crust. Drop spoonfuls of strawberry preserves, swirl gently with a knife, then top with remaining batter.

Bake the Cheesecake:

  • Place springform pan in a larger baking pan. Add hot water to the larger pan (water bath method). Bake for 50–55 minutes, until the edges are set and center slightly jiggles.

Cool and Chill:

  • Remove from oven and cool completely. Refrigerate for at least 4 hours or overnight.

Make the Strawberry Crunch Topping:

  • Mix crushed Oreos, melted butter, and strawberry gelatin powder until crumbly. Sprinkle evenly over the chilled cheesecake.

Serve:

  • Top with whipped cream and fresh strawberries if desired. Slice and enjoy!

  • Make Ahead: Cheesecake can be made 1–2 days in advance and chilled. Add topping just before serving.
  • Topping Variation: Swap strawberry gelatin for raspberry or cherry for a fun twist.
