Creamy Ranch Pasta Salad Recipe (Kid-Friendly, Make-Ahead, Crowd-Pleasing)

When Saad turned seven, I needed a pasta salad that would actually disappear from the buffet table at his birthday party instead of sitting there looking sad. This creamy ranch version became an instant hit with the neighborhood kids and their parents, and I have made it countless times since then for gatherings, potlucks, and family meals.

Ingredients
  

Pasta and Base

  • 1 pound rotini or fusilli pasta tri-color adds visual appeal for kids
  • 1 cup mayonnaise full-fat works best
  • ½ cup sour cream for tanginess and creaminess
  • 2 tablespoons fresh lemon juice brightens the flavor

Seasonings and Flavor

  • 3 tablespoons ranch seasoning mix store-bought or homemade
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper finely ground

Fresh Vegetables and Cheese

  • 1 cup fresh corn kernels frozen and thawed or canned and drained
  • 1 cup cherry tomatoes halved, or diced regular tomatoes
  • 1 cup cucumber diced into small pieces
  • ½ cup red onion thinly sliced or finely diced
  • ¾ cup sharp cheddar cheese shredded
  • ¼ cup fresh parsley chopped, for garnish

Instructions
 

Prepare the Pasta

  • Bring a large pot of salted water to a boil and cook the rotini pasta according to package directions until al dente, usually 8 to 10 minutes. Drain the pasta in a colander and rinse with cold water until completely cooled. This prevents the pasta from becoming mushy and sticking together.
  • Transfer the cooled pasta to a very large mixing bowl, preferably one that is at least 6 quarts in size, as you will be adding many vegetables and need plenty of room to toss everything together.

Make the Dressing

  • In a medium bowl, whisk together the mayonnaise, sour cream, and fresh lemon juice until smooth and well combined. Add the ranch seasoning mix, salt, and black pepper, whisking until no lumps remain and the seasoning is evenly distributed throughout the dressing.

Combine and Finish

  • Pour the creamy ranch dressing over the cooled pasta and use a large spoon or spatula to gently toss until every piece of pasta is coated with the dressing. Take your time with this step to ensure even distribution.
  • Add the corn kernels, halved cherry tomatoes, diced cucumber, sliced red onion, and shredded cheddar cheese to the pasta mixture. Gently fold all the vegetables and cheese into the dressed pasta until everything is evenly distributed and well combined.
  • Taste the salad and adjust seasoning with additional salt, pepper, or lemon juice as needed. Transfer to a serving bowl and garnish with fresh chopped parsley. Refrigerate for at least one hour, or up to 24 hours, before serving. The flavors meld beautifully as it sits, and the salad will taste even better the next day.

Notes

This salad tastes even better after sitting in the refrigerator for a few hours, making it perfect for make-ahead meal planning. Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. Variation: Swap the corn for frozen peas, add diced ham or grilled chicken for extra protein, or use a combination of both ranch and Italian dressing for more complex flavor.
