Ingredients
  

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup ditalini pasta
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot and set aside.
  • In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  • Pour in the chicken broth and bring the mixture to a boil. Add the dried basil and dried oregano.
  • Stir in the ditalini pasta and cook according to the package instructions until al dente.
  • Reduce the heat to low and stir in the cooked sausage, heavy cream, and grated Parmesan cheese. Season with salt and pepper to taste.
  • Simmer the soup for an additional 5-10 minutes, stirring occasionally, until the soup is creamy and well combined.
  • Garnish with fresh parsley and serve hot.

  • Sausage Variations: You can use mild or spicy Italian sausage depending on your preference. Turkey sausage is also a great alternative for a lighter version.
  • Pasta Alternatives: Feel free to use other small pasta shapes like elbow macaroni, small shells, or orzo.
