Ingredients
  

For the Pasta:

  • 8 oz fettuccine or spaghetti
  • 1 tablespoon olive oil
  • 1 pound large shrimp peeled and deveined
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic minced

For the Sauce:

  • 2 tablespoons butter
  • ½ cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes optional
  • 1 teaspoon paprika
  • Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta:

  • Cook pasta according to package directions. Drain and set aside, reserving ½ cup pasta water.

Cook the Shrimp:

  • Heat olive oil in a large skillet over medium heat. Season shrimp with salt, pepper, and Italian seasoning. Cook for 2–3 minutes per side until pink and remove from the pan.

Make the Sauce:

  • In the same pan, melt butter and add garlic and sun-dried tomatoes. Cook for 1–2 minutes. Pour in heavy cream, paprika, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.

Combine Everything:

  • Stir in Parmesan cheese until melted. Add shrimp and cooked pasta to the sauce. Toss well to coat, adding a splash of pasta water if needed for creaminess.

Serve:

  • Garnish with fresh basil or parsley and extra Parmesan cheese. Serve immediately.
