  • pounds baby potatoes red or gold, halved
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

Cook the Potatoes:

  • Place baby potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook for 10–12 minutes or until fork-tender. Drain and set aside.

Make the Garlic Sauce:

  • In a large skillet, heat butter and olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant (but not browned).

Add Cream and Cheese:

  • Pour in heavy cream and stir in Parmesan. Let simmer for 3–4 minutes, stirring frequently, until sauce thickens slightly.
