Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Sharp knife or mandoline
  • Colander
  • Whisk

Ingredients

For the Salad:

  • 3 large English cucumbers, thinly sliced
  • ½ medium red onion, thinly sliced
  • ¼ cup fresh dill, chopped

For the Creamy Dressing:

  • ¾ cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Prepare the Cucumbers

  • Thinly slice the cucumbers and place them in a colander. Lightly sprinkle with salt and let them sit for 10 minutes to draw out excess moisture. Pat dry with paper towels.

Make the Dressing

  • In a small bowl, whisk together the sour cream, lemon juice, apple cider vinegar, garlic, sugar, salt, and black pepper until smooth.

Combine the Salad

  • Add the cucumbers, red onion, and fresh dill to a large bowl. Pour the creamy dressing over the vegetables and gently toss until evenly coated.

Chill

  • Refrigerate the salad for at least 15 minutes before serving to allow the flavors to blend.

Serve

  • Give the salad a gentle toss before serving and garnish with additional fresh dill if desired.

Notes

  • Refreshing Side: Crisp cucumbers and fresh dill make this creamy salad especially refreshing for warm-weather meals.
  • Quick Preparation: The salad comes together in about 15 minutes with no cooking required.
  • Best Texture: Salting and draining the cucumbers helps prevent the dressing from becoming watery.
  • Make Ahead: Prepare the dressing several hours ahead, but combine with the cucumbers shortly before serving for the best texture.
  • Easy Variation: Replace half the sour cream with plain Greek yogurt for a tangier, higher-protein dressing.
