Ingredients
  

  • 8 oz Mexican chorizo casing removed
  • 1 tablespoon butter
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon flour
  • 1 cup milk
  • ½ cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ¼ teaspoon cumin
  • ¼ teaspoon chili powder
  • Salt to taste
  • Fresh cilantro or jalapeño slices for garnish
  • Tortilla chips or soft pretzels for serving

Instructions
 

Cook the Chorizo:

  • In a skillet, cook the chorizo over medium heat until browned. Remove and set aside.
  • In the same pan, melt butter and sauté onion and garlic until soft.

Make the Sauce:

  • Stir in flour and cook for 1 minute. Gradually whisk in milk and cream until smooth.
  • Add both cheeses, stirring until melted and creamy.

Combine & Serve:

  • Stir in cooked chorizo, cumin, chili powder, and salt.
  • Pour into a serving bowl, top with cilantro or jalapeños, and serve warm with chips.

  • Make Ahead: Cook the chorizo and store separately. Reheat and add to the cheese sauce when ready to serve.
