Heat olive oil in a large skillet over medium heat. Add sliced chicken sausages and cook for 5-7 minutes, until browned and cooked through.
Remove the sausages from the skillet and set aside.
In the same skillet, add minced garlic and cook for 1 minute until fragrant.
Add chicken broth and bring to a simmer. Stir in orzo, cover, and cook for 8-10 minutes, stirring occasionally, until the orzo is tender.
Lower the heat and stir in heavy cream, spinach, mozzarella cheese, dried basil, salt, and pepper.
Return the cooked sausages to the skillet and stir until everything is combined and heated through.
Top with grated Parmesan cheese and serve hot.
You can substitute the chicken sausage with turkey or pork sausage based on your preference.
For a lighter version, use half-and-half instead of heavy cream.
Add some red pepper flakes for a bit of spice.
If you don't have orzo, you can substitute with small pasta shapes like ditalini or penne.
Feel free to use fresh spinach or other leafy greens like kale.
For extra flavor, sprinkle some fresh herbs like basil or parsley before serving.
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
This dish can be made ahead of time and reheated for a quick meal.
