Ingredients
  

  • 2 chicken sausages sliced
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 cup spinach chopped
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add sliced chicken sausages and cook for 5-7 minutes, until browned and cooked through.
  • Remove the sausages from the skillet and set aside.
  • In the same skillet, add minced garlic and cook for 1 minute until fragrant.
  • Add chicken broth and bring to a simmer. Stir in orzo, cover, and cook for 8-10 minutes, stirring occasionally, until the orzo is tender.
  • Lower the heat and stir in heavy cream, spinach, mozzarella cheese, dried basil, salt, and pepper.
  • Return the cooked sausages to the skillet and stir until everything is combined and heated through.
  • Top with grated Parmesan cheese and serve hot.

Notes

  • You can substitute the chicken sausage with turkey or pork sausage based on your preference.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Add some red pepper flakes for a bit of spice.
  • If you don't have orzo, you can substitute with small pasta shapes like ditalini or penne.
  • Feel free to use fresh spinach or other leafy greens like kale.
  • For extra flavor, sprinkle some fresh herbs like basil or parsley before serving.
