Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 pounds total)
  • 4 ounces cream cheese, softened
  • ¼ cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • ¼ cup chicken broth
  • 1 tablespoon dried Italian herbs (or a mix of oregano, basil, and thyme)
  • Salt and pepper to taste
  • 4 boneless, skinless chicken breasts (about 1.5 pounds total)
  • 1 tablespoon olive oil
  • 4 ounces cream cheese, softened
  • ½ cup chicken broth
  • ¼ cup heavy cream
  • ¼ cup shredded Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon dried Italian herbs (or a mix of oregano, basil, and thyme)
  • Salt and pepper to taste

Instructions
 

  • Preheat oven: Preheat oven to 375°F (190°C). Grease a baking dish.
  • Prepare chicken: Season the chicken breasts with salt and pepper.
  • Make cream cheese mixture: In a small bowl, combine the softened cream cheese, shredded cheddar cheese, and crumbled bacon.
  • Stuff chicken: Make a small slit in the side of each chicken breast, creating a pocket. Fill each pocket with the cream cheese mixture.
  • Bake: Place the stuffed chicken breasts in the prepared baking dish. Pour the chicken broth around the chicken. Sprinkle with Italian herbs. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Serve: Serve hot, with the pan juices spooned over the chicken.

Notes

  • Chicken: You can use chicken breasts or thighs. Thighs will be more tender and flavorful.
