Ingredients
  

  • 2 cups fresh or frozen cranberries
  • 1 cup red bell pepper finely chopped
  • 1 –2 jalapeños seeded and finely chopped (adjust to taste)
  • 1 cup granulated sugar
  • ½ cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 packet 1.75 oz fruit pectin (or follow package instructions for low-sugar pectin)

Instructions
 

Cook the Base:

  • In a medium saucepan, combine cranberries, red bell pepper, jalapeños, vinegar, and lemon juice. Bring to a boil over medium heat, stirring often.

Add Sugar and Pectin:

  • Stir in sugar and pectin. Return to a boil and cook for 5–8 minutes, stirring constantly, until the mixture thickens and cranberries burst.

Blend (Optional):

  • For a smoother jelly, use an immersion blender to puree the mixture to your desired consistency. Be careful—it’s hot!

Jar the Jelly:

  • Pour the hot jelly into sterilised jars. Seal tightly and let cool at room temperature. Store in the refrigerator or process in a water bath for shelf-stable storage.
