Ingredients
  

For the Meatloaf:

  • 2 pounds ground beef 80/20 recommended
  • 1 cup crushed Ritz crackers or saltine crackers
  • 1 medium onion finely chopped
  • ½ cup green bell pepper finely chopped
  • 4 large eggs lightly beaten
  • ½ cup milk
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder

For the Glaze:

  • 1 cup ketchup
  • ½ cup brown sugar
  • 1 teaspoon mustard

Instructions
 

  • Preheat Oven: Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  • Mix Meatloaf: In a large mixing bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, salt, pepper, and garlic powder. Mix gently until combined—do not overmix.
  • Shape and Bake: Transfer mixture to the loaf pan and shape evenly. Bake uncovered for 45 minutes.
  • Make Glaze: In a small bowl, stir together ketchup, brown sugar, and mustard.
  • Top Meatloaf: Spread half the glaze over the meatloaf. Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (71°C).
  • Rest and Serve: Let meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes or green beans for a classic Cracker Barrel-style meal.

Notes

  • Cracker Swap: Oats can be used instead of crackers for a heartier texture.
  • Make Ahead: Assemble meatloaf up to a day ahead, cover, and refrigerate until ready to bake.
