This Cracker Barrel meatloaf copycat recipe is juicy, flavourful, and topped with a tangy ketchup glaze. Made with simple pantry ingredients, it’s the perfect comfort food for family dinners and a true Southern classic.
Preheat Oven: Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
Mix Meatloaf: In a large mixing bowl, combine ground beef, crushed crackers, onion, bell pepper, eggs, milk, salt, pepper, and garlic powder. Mix gently until combined—do not overmix.
Shape and Bake: Transfer mixture to the loaf pan and shape evenly. Bake uncovered for 45 minutes.
Make Glaze: In a small bowl, stir together ketchup, brown sugar, and mustard.
Top Meatloaf: Spread half the glaze over the meatloaf. Return to oven and bake for another 15 minutes, or until internal temperature reaches 160°F (71°C).
Rest and Serve: Let meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes or green beans for a classic Cracker Barrel-style meal.
Notes
Cracker Swap: Oats can be used instead of crackers for a heartier texture.
Make Ahead: Assemble meatloaf up to a day ahead, cover, and refrigerate until ready to bake.
Storage: Store leftovers in the fridge for up to 3 days or freeze slices for up to 2 months.
