Cowboy Style Beef and Potato Casserole is a hearty, comforting dish combining seasoned ground beef, tender potatoes, and melted cheese. This easy bake is perfect for family dinners or casual gatherings with bold, smoky flavors.
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook Beef:
Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until softened. Add ground beef, smoked paprika, chili powder, salt, and pepper. Cook until browned and cooked through. Drain excess fat.
Layer Casserole:
Spread half the sliced potatoes in the bottom of the baking dish. Add half the beef mixture on top. Dollop half the sour cream over the beef. Repeat layers with remaining potatoes, beef, and sour cream.
