Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups rolled oats
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • 1 ½ cups semisweet chocolate chips

Instructions
 

Preheat oven:

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

Cream butter and sugars:

  • In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla, and mix well.

Combine dry ingredients:

  • In another bowl, whisk together flour, baking soda, baking powder, and salt.

Make the dough:

  • Gradually add the dry ingredients to the wet mixture. Stir in oats, coconut, pecans, and chocolate chips until fully combined.

Scoop and bake:

  • Drop dough by rounded tablespoons onto prepared baking sheets. Bake for 10–12 minutes or until edges are golden. Cool on the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Storage: Store in an airtight container at room temperature for up to 5 days.
  • Freezing: Dough can be frozen in balls for up to 2 months. Bake from frozen by adding 1–2 minutes to the baking time.
  • Customise it: Swap pecans with walnuts or add butterscotch chips for a flavour twist.
  • Make it chewy: Slightly underbake for a soft, chewy centre.
