Ingredients
  

Vegetables & Beans:

  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • ½ red onion finely diced
  • 1 jalapeño seeded and minced
  • ¼ cup cilantro chopped

Dressing:

  • ¼ cup olive oil
  • 3 tablespoon lime juice fresh
  • 1 tablespoon honey
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

Make Dressing:

  • In a small bowl, whisk together olive oil, lime juice, honey, garlic, salt, and black pepper.

Combine Ingredients:

  • In a large bowl, mix black beans, black-eyed peas, corn, tomatoes, bell pepper, onion, jalapeño, and cilantro.

Mix Together:

  • Pour dressing over the mixture and toss until everything is well coated.

Chill & Serve:

  • Refrigerate for at least 30 minutes for best flavor. Serve with tortilla chips or as a side salad.

Notes

  • Letting it chill enhances the flavor.
  • Adjust spice level by adding more jalapeño.
  • Great as dip, salad, or taco topping.
