Ingredients
  

For the Sauce

  • 2 cups cottage cheese full-fat or 2% works best
  • 4 cloves garlic minced
  • 2 tablespoons lemon juice fresh squeezed
  • ½ cup reserved pasta water to loosen sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly cracked

  • 1 pound spaghetti or linguine

  • 2 tablespoons fresh basil leaves torn, for garnish
  • 1 pinch red pepper flakes optional, for heat

Instructions
 

Prepare the Sauce

  • Add the cottage cheese, minced garlic, lemon juice, salt, and black pepper to a high-powered blender. Blend on high speed for 2-3 minutes, scraping down the sides as needed, until the mixture is completely smooth and silky with no lumps remaining. The sauce should resemble heavy cream in texture.
  • Transfer the blended sauce to a large skillet and warm it over medium heat, stirring occasionally. Do not boil - keep the heat at medium to prevent the sauce from breaking. If the sauce seems too thick, add 2-3 tablespoons of pasta water to reach your desired consistency.

Cook and Combine

  • While the sauce warms, bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package directions until al dente, usually 8-10 minutes. Reserve ½ cup of pasta water before draining.
  • Add the hot drained pasta directly to the warm cottage cheese sauce, tossing gently but thoroughly to coat every strand. The residual heat will warm the pasta further. If the sauce seems too thick, add reserved pasta water one tablespoon at a time until you reach a silky, clinging consistency.
  • Divide the pasta among four bowls and top each serving with 2-3 tablespoons of freshly grated Parmesan cheese, a generous pinch of freshly cracked black pepper, and a small handful of torn fresh basil leaves. Drizzle lightly with extra virgin olive oil if desired and finish with a small pinch of red pepper flakes for subtle heat.

Tip: Blend the cottage cheese until completely smooth for the silkiest sauce texture - any lumps will be noticeable in the final dish. Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days. The sauce will thicken slightly when cold; reheat gently with a splash of pasta water to loosen. Variation: Swap basil for mint, or stir in roasted red peppers and sun-dried tomatoes for a different flavor profile.
