Ingredients
  

For the Flatbread Crust:

  • 1 cup full-fat cottage cheese blended smooth
  • 2 large eggs
  • ½ teaspoon salt
  • ½ teaspoon garlic powder optional
  • ½ teaspoon Italian seasoning optional

For the Toppings:

  • ¼ cup pizza sauce or marinara
  • ½ cup shredded mozzarella cheese
  • toppings of choice pepperoni, mushrooms, bell peppers, olives, etc.

Instructions
 

Preheat Oven:

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Blend Ingredients:

  • In a blender or food processor, combine cottage cheese, eggs, salt, garlic powder (if using), and Italian seasoning (if using). Blend until completely smooth and no lumps remain.

Spread Batter:

  • Pour the mixture onto the prepared baking sheet. Spread into a thin, even rectangle or circle (about ¼-inch thick).

Bake Crust:

  • Bake for 10-12 minutes, until the flatbread is golden brown on the edges and set in the center.

Flip Crust:

  • Remove from oven and carefully flip the flatbread using a spatula. It should be firm enough to flip easily.

Add Toppings:

  • Spread pizza sauce over the flatbread. Sprinkle with shredded mozzarella and add your favorite toppings.

Bake Again:

  • Return to oven and bake for 5-7 more minutes, until cheese is melted and bubbly.

Serve:

  • Let cool for 2 minutes, then slice and serve hot.

Notes

  • Make Ahead: The flatbread crust can be baked ahead and stored in the refrigerator for up to 3 days. Add toppings and bake before serving.
