These Corn Fritters are crispy on the outside, tender on the inside, and bursting with sweet corn flavor. Perfect as a snack, side dish, or appetizer, they’re easy to make and loved by all ages.

Ingredients
  

  • 1 cup corn kernels fresh, canned, or frozen
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup milk
  • 2 tablespoons chopped green onions
  • ¼ cup shredded cheddar cheese optional
  • Vegetable oil for frying

Instructions
 

Prepare Batter:

  • In a bowl, mix flour, baking powder, and salt. In another bowl, beat the egg and milk together. Combine wet and dry ingredients, then fold in corn, green onions, and cheese.

Heat Oil:

  • Heat about ¼ inch of vegetable oil in a large skillet over medium heat.

Fry Fritters:

  • Drop spoonfuls of batter into hot oil, flatten slightly with the back of the spoon. Fry for 2–3 minutes per side until golden and crispy.

Drain:

  • Remove fritters and drain on paper towels.

Serve:

  • Serve warm with sour cream or your favorite dipping sauce.

  • Make Ahead: Batter can be made an hour ahead and refrigerated.
