Ingredients

  • 1 can 13.5 oz full-fat coconut milk
  • ¼ cup chia seeds
  • 1 –2 tablespoons maple syrup or honey to taste
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: fresh fruit shredded coconut, granola, nuts, chocolate chips

Instructions

Mix the Base:

  • In a medium bowl or jar, whisk together coconut milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.

Let It Thicken:

  • Cover and refrigerate for at least 4 hours or overnight. Stir once after the first hour to prevent clumping.

Serve:

  • Once thickened, stir again and divide into individual servings. Top with your favourite fruits, coconut, or granola.

Notes

Make Ahead: Perfect for prepping a few days in advance—store in jars for grab-and-go meals.
Sweetener Swaps: Use agave, date syrup, or stevia for different dietary needs.
Thicker Pudding: Add more chia seeds (up to ⅓ cup) for a thicker consistency.
Flavour Ideas: Try adding cocoa powder, cinnamon, or mashed banana for variety.
Storage: Keeps in the fridge for up to 5 days. Not freezer-friendly due to texture changes.
