Cobb Pasta Salad is a colorful and hearty salad with pasta, grilled chicken, bacon, eggs, tomatoes, avocado, and cheese, tossed in a tangy dressing. Perfect for lunch or picnics.

Ingredients
  

For the Salad:

  • 12 oz pasta (rotini or bowtie) cooked and cooled
  • 2 cups grilled chicken cubed
  • 4 slices bacon cooked and crumbled
  • 2 hard-boiled eggs chopped
  • 1 cup cherry tomatoes halved
  • 1 cup avocado diced
  • ½ cup blue cheese crumbled
  • ¼ cup green onions sliced

For the Dressing:

  • ½ cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

Prepare Pasta:

  • Cook pasta according to package instructions. Drain and rinse under cold water. Set aside to cool.

Mix Salad Ingredients:

  • In a large bowl, combine cooked pasta, grilled chicken, bacon, eggs, cherry tomatoes, avocado, blue cheese, and green onions.

Prepare Dressing:

  • In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and black pepper.

Assemble Salad:

  • Pour dressing over salad mixture. Toss gently until evenly coated. Cover and refrigerate for at least 30 minutes.

Serve:

  • Serve chilled. Optionally garnish with extra bacon or green onions.
