This Classic Dill Pickle Macaroni Salad is creamy, tangy, and full of crunch. With tender pasta, fresh veggies, and plenty of dill pickles, it’s the perfect side dish for cookouts, picnics, and family gatherings.

Ingredients
  

  • 3 cups elbow macaroni cooked and cooled
  • 1 cup dill pickles chopped
  • ½ cup red onion finely diced
  • ½ cup celery diced
  • ½ cup cheddar cheese cubed
  • 3 hard-boiled eggs chopped (optional)
  • ¾ cup mayonnaise
  • 2 tablespoons pickle juice
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • Fresh dill chopped (for garnish)

Instructions
 

  • Cook Pasta: Boil macaroni according to package directions. Drain and rinse with cold water to cool.
  • Prep Ingredients: Chop pickles, onion, celery, cheese, and eggs.
  • Make Dressing: In a bowl, whisk together mayonnaise, pickle juice, Dijon mustard, garlic powder, salt, and pepper.
  • Combine: In a large bowl, mix pasta, pickles, onion, celery, cheese, and eggs. Pour dressing over and toss to coat.
  • Chill & Serve: Cover and refrigerate for at least 1 hour before serving. Garnish with fresh dill.

Notes

  • Make Ahead: Best when made a few hours before serving to let flavours blend.
  • Variation: Add diced ham or bacon for extra flavour.
