Ingredients
  

  • 2 lbs sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika optional
  • 1 tablespoon fresh chopped parsley for garnish optional

Instructions
 

  • Preheat the Oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare Sweet Potatoes: In a large bowl, toss sweet potato cubes with olive oil, maple syrup, cinnamon, salt, pepper, and paprika (if using).
  • Arrange and Roast: Spread sweet potatoes in a single layer on the prepared baking sheet.
  • Bake: Roast for 25–30 minutes, stirring halfway through, until tender and lightly caramelized.
  • Serve: Transfer to a serving dish and garnish with parsley, if desired. Serve warm.
