Cinnamon Cheesecake Cookies are soft, creamy, and bursting with warm cinnamon flavour. These melt-in-your-mouth cookies have a rich cheesecake centre and make the perfect treat for holidays, gifting, or everyday snacking.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make Dough:
In a large bowl, cream together butter, cream cheese, and sugar until fluffy. Beat in egg and vanilla. In another bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually mix dry ingredients into the wet ingredients until a soft dough forms.
Shape and Roll:
In a small bowl, mix sugar and cinnamon for rolling. Scoop dough into 1-inch balls and roll in the cinnamon-sugar mixture.
Bake:
Place cookies on the baking sheet about 2 inches apart. Bake for 12–14 minutes, or until edges are lightly golden. Let cool on the pan for 5 minutes before transferring to a wire rack.
