Ingredients

  • 1 sleeve about 40 saltine crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar packed
  • 2 cups white chocolate chips
  • ½ cup granulated sugar
  • teaspoons ground cinnamon

Instructions

Preheat Oven:

  • Preheat oven to 350°F (175°C). Line a 10x15-inch rimmed baking sheet with parchment paper or foil. Arrange saltines in a single layer to cover the pan.

Make Toffee Layer:

  • In a saucepan, melt butter and brown sugar over medium heat. Bring to a boil and cook for 3 minutes, stirring constantly until thickened. Carefully pour over the crackers and spread evenly with a spatula.

Bake:

  • Place the pan in the oven and bake for 5–6 minutes until bubbly. Remove from oven and immediately sprinkle white chocolate chips over the top.

Melt & Spread:

  • Let chips sit for 1–2 minutes to soften, then spread evenly with a spatula.

Add Cinnamon Sugar:

  • Mix sugar and cinnamon together in a small bowl. Sprinkle evenly over the melted white chocolate.

Cool & Break:

  • Let toffee cool at room temperature, then refrigerate until set (about 1 hour). Once firm, break into pieces and serve.

Make Ahead:
This toffee can be made up to a week in advance and stored in an airtight container.
