Preheat oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper. Lightly grease.
In a bowl, whisk flour, baking powder, and salt.
In a large bowl, beat eggs and sugar until pale and thick (about 5 minutes). Mix in vanilla. Gently fold in dry ingredients until just combined.
Bake:
Spread batter evenly into the pan. Bake for 10–12 minutes, or until the cake springs back when touched.
Roll the Cake:
While hot, turn the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment, then roll the cake up with the towel (short end first). Let cool completely.
Make the Filling:
Whip the cream, powdered sugar, and vanilla until stiff peaks form. Unroll the cooled cake and spread with raspberry jam, then whipped cream.
Re-Roll and Chill:
Roll the cake back up tightly (without the towel). Chill for at least 1 hour.
Decorate:
Dust with powdered sugar and top with raspberries or extra whipped cream before serving.
