In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Make the Dough:
In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla extract; mix well. Gradually add dry ingredients until dough forms.
Divide and Colour:
Divide dough into three equal parts. Leave one plain, colour one red, and one green. Mix food colouring into each portion thoroughly.
Roll and Stack:
Roll each colour into equal-sized rectangles (about ¼ inch thick). Stack layers on top of each other, gently pressing them together. Roll tightly into a log.
Chill:
Wrap the dough log in plastic wrap and chill for at least 2 hours or until firm.
Slice and Bake:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Slice dough into ¼-inch rounds and place on baking sheets about 2 inches apart. Bake for 10–12 minutes or until edges are just set.
Cool:
