Ingredients
  

  • 8 oz Mexican chorizo casing removed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1 cup shredded Monterey Jack cheese
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • Fresh cilantro chopped (for garnish)
  • Warm tortillas or tortilla chips for serving

Instructions
 

Cook the Chorizo:

  • In a skillet over medium heat, cook the chorizo until browned, about 5 minutes.
  • Add onion and garlic, cooking until soft and fragrant.

Melt the Cheese:

  • Stir in both cheeses, paprika, and chili powder. Reduce heat to low and stir until fully melted and bubbly.

Serve:

  • Transfer to an oven-safe dish if desired, broil for 2–3 minutes until golden and bubbly.
  • Garnish with cilantro and serve hot with tortillas or chips.
