Ingredients
  

For the Cake

  • 1.75 cups all-purpose flour spooned and leveled
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon salt
  • 0.75 cup unsweetened cocoa powder Dutch-process preferred
  • 0.75 cup boiling water
  • 0.5 cup quality whiskey bourbon, rye, or Scotch
  • 1 cup sugar granulated
  • 0.5 cup brown sugar packed
  • 0.75 cup vegetable oil
  • 3 large eggs room temperature
  • 2 teaspoons vanilla extract

For the Whiskey Soak

  • 0.25 cup quality whiskey same type as cake
  • 2 tablespoons sugar

For the Ganache Frosting

  • 12 ounces dark chocolate 60-70% cocoa, chopped
  • 1 cup heavy cream
  • 3 tablespoons quality whiskey
  • 2 tablespoons butter
  • 1 tablespoon light corn syrup optional, for shine
  • 0.25 teaspoon salt fleur de sel or sea salt

Instructions
 

Make the Cake

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper on the bottom and sides. In a small bowl, whisk together flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  • Pour boiling water over the whiskey and set aside for one minute to slightly cool. In a large mixing bowl, whisk together both sugars and oil until combined. Add eggs one at a time, whisking well after each addition. Whisk in vanilla extract, then the whiskey-water mixture.
  • Gently fold the dry ingredients into the wet ingredients using a spatula or whisk, stirring just until combined. Do not overmix - a few small flour streaks are fine. Pour batter into prepared pan.
  • Bake for 22-26 minutes until a toothpick inserted into the center comes out with just a few moist crumbs clinging to it. The cake should still feel slightly soft in the center - this is intentional. Do not overbake.

Soak and Cool

  • While the cake bakes, combine whiskey and sugar in a small saucepan. Heat gently just until the sugar dissolves, then remove from heat. As soon as the cake comes out of the oven, poke it all over with a wooden skewer or fork, creating small holes across the entire surface. Slowly pour the whiskey-sugar mixture evenly over the hot cake, allowing it to absorb.
  • Allow the cake to cool completely in the pan - at least 2 hours at room temperature or 1 hour in the refrigerator. The cooling and soaking period is where the magic happens, creating an impossibly moist crumb.

Make the Ganache and Frost

  • Place chopped chocolate in a heat-safe bowl. Heat cream until it just begins to steam and small bubbles form around the edges - do not boil. Pour hot cream over chocolate and let sit undisturbed for 30 seconds. Whisk until completely smooth and glossy.
  • Stir in whiskey, butter, corn syrup if using, and salt. Continue whisking until the ganache is silky and reaches a spreadable consistency. If it becomes too thick, warm it gently over a double boiler for 10-15 seconds.
  • Turn the cooled cake out onto a serving plate. Pour ganache over the top, allowing it to drip down the sides. Spread with an offset spatula to create an even coating. Garnish with chocolate shavings if desired. Allow ganache to set for 15 minutes before slicing. Serve at room temperature for the best chocolate flavor and texture.

Notes

Use quality whiskey here - the flavor matters since it becomes part of the final taste profile. Storage: This cake actually improves after one day. Keep it covered at room temperature for 2 days or refrigerated for up to 5 days. The ganache frosting will soften slightly at room temperature, which is perfect for that fudgy texture. Variation: Replace whiskey with bourbon for a slightly sweeter profile, or use rye whiskey for a spicier complexity.
